the perfect comfort food
a tasty summer breakfast (with a heaping pile of fresh fruit!)

This actually was the first meal I remember Ryan making me. I think we met for breakfast one Saturday morning before going to play tennis and he wouldn’t even let me help him cook ha! He was doing his best to perfect his homemade pancake recipe. Four years later.. and wallah! We’ve found the perfect combo for tasty, buttery, simple yet oh so good flapjacks.
ingredients:
- 1 1/4 stick butter (softened)
- 5 eggs
- 2 cans of evaporated milk
- 3 1/4 tbsp sugar
- 2 1/2 c flour
- 1 1/4 tbs baking powder
how to:
- mix butter & eggs in a large bowl with a hand held mixer (I love this one)
- beat in milk & sugar
- in a smaller bowl, mix flour & baking powder together
- slowly beat in flour mixture to larger bowl.
- heat griddle to just above medium, lather with lotsa butter, and cook until medium brown!
