Easy Fall Recipes I’m Loving

 

Now that it’s October, I wanted to give y’all a little fall cooking inspiration! I’m not a huge cook, but there’s something about cooler weather that gives me all the fall feels and makes me want to whip up festive comfort food. Below are some easy fall recipes that I love / am wanting to try soon.

Ryan and I are trying to stay in for dinner more, so I made this for him last Friday night. It was a hit! The temperature in Boulder didn’t rise above 50 degrees and it was cloudy all day, so it was the perfect comfort food for our first real fall-feeling day. We’ve been taking leftovers for lunch this week, and it’s actually Whole 30 approved! PSA I added a little extra chicken and of course bacon to my dish. I originally started the recipe in my cast iron skillet but had to transfer it to a larger skillet by the time I added all the ingredients.

TBH I had to look up how to pronounce the last word in the title (it’s Spanish for “compound”) haha. I’m a sucker for Mexican food any time of the year, and this would be a fun appetizer to set out when having friends or family over. It’d also be a yummy main dish with some guacamole on the side and a few margaritas!

You guyyyys! I’m a sucker for sweet + savory dishes so the sweet potato / goat cheese combo just called out my name. I love that this dish contains all my favorite Thanksgiving side dish ingredients and it can be ready to eat in under an hour. This one really makes me pumped for all the Friendsgiving gatherings. It would be fun to try different cheeses on top too – like brie or blue cheese.

If you follow me on Instagram, then you know that almost every single weekend Ryan and I make ginormous homemade pancakes bigger than your face. I think we’ve found a rival to our current at-home brunch situation. I saw the words “pumpkin spice” and “waffles” in the same sentence, and I was DONE.

Had to end this post with something exciting like this cute dessert! Wouldn’t these be so fun to make with friends or kids?! I personally have not made these yet, but I think they would just be the cutest touch to have on your table at a Halloween party or Friendsgiving.
