Believe it or not, it actually SNOWED in Colorado last week. It’s been in the 80’s ever since, but still it snowed, which means fall is coming. A few days ago I went to Trader Joe’s, rifled through all of their fall goodies, and left with an overflowing cart full of ingredients I cannot wait to try!
That grocery trip really got me in the mood for fall, and even though the temp reaches the 80’s during the day here in CO, the air is crisp and even chilly at night. Which means… I’m allll about making fall food these days.
I’ve only made one of the meals below, but I can’t wait to try all the others this season!

I LOVE a good hash. I love the fact that you can literally throw in whatever you want and really just clean out the fridge. It’s an easy, hearty meal that pretty much everyone will like!
apple galette with salted Carmel sauce [source: Growing up Cali]
Well this just makes my mouth water lol. This one looked actually pretty simple to make, and honestly, who doesn’t like Carmel sauce?!
pumpkin cauliflower gratin [source: Well and Full]
Not gonna lie, I added this one to the list because it looks so pretty! ha! This would be such a good side dish to serve with turkey.

Do y’all ever just want to eat a different kinda meat than you’re used to?! We eat a lot of chicken, and we sprinkle in beef and turkey. IDK why I didn’t think of incorporating brats sooner.. this recipe sounds so good to me. It’s also a huge bonus that there’s ONE PAN involved. One.
Carmel apple pie sangria [source: Inspired by Charm]
I haven’t made sangria in ages, and I think I may just have to break my dry spell with this recipe lol! This would be so fun to make for game day one Saturday this fall.

For those days when you want to eat healthier, this looks amazing. I like the simplicity of the ingredients, too.
skillet brown sugar peach cobbler [source: Half Baked Harvest]
This is the ONE recipe I have made and let me just tell you, this cobbler is *amazing.* The peach selection at my grocery store wasn’t great, so used a ratio of 2/3 peaches and 1/3 honey crisp apples. It was sooo good y’all. Definitely a must-try for desserts this season. Not to mention it’s a really easy recipe.
